Baked Canned Salmon Patties

Use canned salmon and other pantry staples to make these salmon cakes that are loaded with flavor and very easy to make!

Equipment

  • 1 Large Nonstick Baking Cookie Sheet

Ingredients

  • 14.5 oz canned salmon
  • ¾ cup Panko bread crumbs
  • 1 small red onion finely diced
  • ¼ cup Miracle Whip
  • 2 large eggs lightly beaten
  • 5 dashes hot sauce
  • ½ tsp ground black pepper
  • ¼ tsp lemon juice
  • tsp ground thyme
  • 2 tsp Old Bay Seasoning
  • 1 Tbsp oil neutral; canola, olive, vegetable, etc.

Instructions

  • Preheat your oven to 425°F. Oil your baking sheet and set it aside.
  • Using a can opener, open the canned salmon, drain it, and place it on a plate. From here, you can debone it or include the bone, and scoop it into a large mixing bowl.
  • In a large mixing bowl, add the remaining ingredients to your flaked salmon, using your hands to mix well. Then, form into 8 - 10 patties.
  • Place your patties onto the oiled baking sheet, bake for 15 minutes, flip, and bake for another 5 - 8 minutes, or until desired golden brown.
  • Serve hot, on a bun, alone with some tartar sauce, or however you choose. Enjoy!

Notes

Storage Tips

Once fully cooled, you have two options. You can either:
  • Refrigerate: Wrap in plastic, clear wrap, or aluminum foil and place them in an airtight container. You can store them for up to 4 days in the coldest part of the fridge, but it's best to enjoy them within 3 - 4 days for higher-quality freshness. If you're approaching your 4 days, freeze to avoid food waste.
  • Freeze: Place the fillets on a baking sheet first to flash freeze for up to 2 hours. Then, place them in an airtight container or a resealable freezer bag, seal, and store for up to 3 months.

Reheating

  • In a hurry, you can use the microwave on low, but maybe stick to your at-home microwave instead of taking fish to work. Doing so can cause what's known as the 'side-eye'. 👀
  • However, you can bake in the oven for up to 15 minutes, at 350°F, after lightly greasing a baking tray.
