Fish
- 4 fillets tilapia
- ½ Tbsp olive oil
- 1 tsp organic turmeric
- 1 tsp Old Bay Seasoning
- 1 tsp ground black pepper
- ½ tsp Dash Lemon Pepper seasoning
- ½ tsp sea salt
Vegetables
- 1 12 oz bag frozen California mixed vegetables
- ½ Tbsp canola oil
- ½ tsp Dash Extra Spicy seasoning
- 1 tsp ground black pepper
- 1 - 2 Tbsp unsalted butter
Instructions
- Preheat your oven to 425°F. Grease the bottom of your roasting pan lightly or spray with PAM spray and set aside.
- In a medium bowl or a sealable freezer bag, add your fish fillets along with the oil and seasoning mix and with gloves, massage the fish very well to distribute the spices.
- In the frozen bag of vegetables (or a sealable freezer bag), add your oil and seasoning mix and shake.
- Add your seasoned vegetables, spreading them out, across the bottom of the pan. On top of that, add your seasoned fish and lightly spray with PAM butter spray, drizzle with melted butter or dot a few chunks a butter throughout.
- Place the baking dish in the oven and bake for 20 minutes. If you like your fish and veggies extra tender and crispy, and still juicy (yes it's possible), then leave in the oven for an extra 5 - 10 minutes.
- Remove from oven, sprinkle lemon juice serve hot, and enjoy! NOTE: For any leftovers, store them in the refrigerator in a secured bowl with a lid.
