Ingredients
Cake Batter
- ¾ cup granulated sugar
- 2 large eggs
- 2 tsp. Madagascar vanilla bean extract
- ⅓ cup vegetable oil (or blend of butter + oil; 2.5 Tbsp. butter + 3 Tbsp. oil)
- ½ cup milk 1%
- 1 ¼ cup unbleached all-purpose flour sifted
- 1 ¼ tsp. baking powder
- ¼ tsp. salt optional
Simple Syrup
- ¼ cup granulated sugar
- ¼ cup water
- pinch of sea salt
- 2 tsp. Madagascar vanilla bean extract
Instructions
Simple Syrup
- Combine sugar, water, and salt.
- Heat enough to dissolve the sugar, then stir in extract. Set aside and let cool.
Cake
- Preheat your oven to 350° F degrees.
- Grease or Spray with PAM baking spray on an 8 or 9-inch round cake pan.
- Using an electric mixer on high (or 3 - 4 if you have a digital mixer), beat sugar, eggs, & vanilla for one minute to thicken.
- On low speed, add the remaining ingredients (in the order listed) but do not over-mix. This should take less than a minute.
- Pour into the baking pan and bake for 25 - 30 minutes until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let cool for 10 - 15 minutes before removing the pan.
- Once the cake is out of the pan and onto the cooling rack, poke a few holes in the cake using a toothpick (small) or skewer (preferred size). Using a spritz/spray bottle or a pastry brush, apply the simple syrup.
- You can then serve and enjoy! OR add frosting and enjoy!
