Cake Batter

  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp. Madagascar vanilla bean extract
  • 1/3 cup vegetable oil (or blend of butter + oil; 2.5 Tbsp. butter + 3 Tbsp. oil)
  • 1/2 cup milk 1%
  • 1 1/4 cup all-purpose flour sifted
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt optional

Simple Syrup

  • 1/4 cup sugar
  • 1/4 cup water
  • pinch of salt
  • 2 tsp. Madagascar vanilla bean extract

Simple Syrup

  • Combine sugar, water, and salt.
  • Heat enough to dissolve the sugar, then stir in extract. Set aside and let cool.

  • Preheat your oven to 350° F degrees.
  • Grease or Spray with PAM baking spray on an 8 or 9-inch round cake pan.
  • Using an electric mixer on high (or 3-4 if you have a digital mixer), beat sugar, eggs, & vanilla for one minute to thicken.
  • On low speed, add the remaining ingredients (in the order listed) but do not over-mix. This should take less than a minute.
  • Pour into the baking pan and bake for 25 - 30 minutes until a toothpick inserted in the center comes out clean.
  • Remove the cake from the oven and let cool for 10 - 15 minutes before removing the pan.
  • Once the cake is out of the pan and onto the cooling rack, poke a few holes in the cake using a toothpick (small) or skewer (preferred size). Using a spritz/spray bottle or a pastry brush, apply the simple syrup.
  • You can then serve and enjoy! OR add frosting and enjoy!
