Ingredients: 2 cups unsalted butter (4 sticks) (softened); 2 cups granulated sugar; 2 cups firmly packed brown sugar (light or dark brown); 2 cups flaked or shredded coconut* ((feel free to omit if you choose)); 4 large eggs; 2 tsp Madagascar vanilla bean extract; 4 cups unbleached all-purpose flour; 2 tsp baking soda; 2 tsp salt; 3 tsp ground cinnamon; 6 cups old fashioned oats ((we use old fashioned oats)); 2 cups raisins ((we use seedless)); 1 cup Malibu Tropical Banana Rum
