Ingredients
Meat and Vegetable Filling:
1Tbspcanola oil(any vegetable oil will do)
1lbground turkey
2cupsfrozen Mirepoix vegetables(thawed)
2Tbspunbleached all-purpose flour
Sauce Reduction:
¾cupheated water (in microwave safe measuring cup/bowl) +
1tspchicken Bouillon Powder(dissolved in water)
1Tbsplow sodium soy sauce(we used no salt; so didn't care for low-sodium - but normally what we use)
2 - 3dashesTabasco sauce (or any hot sauce you may have on hand)
2Tbspketchup
Seasoning mix:
1TbspDash Original seasoning
¼tspDash Extra Spicy seasoning
¼tsporganic turmeric
⅛tspPoultry Seasoning
¼tsppaprika
⅛tspground allspice
⅛tspground sage
salt and pepper to taste
Topping:
2pkgsinstant mashed potatoes(cooked per package directions)
⅓cupshredded cheese(any blend works; we used Mexican blend)
Instructions
Preheat the oven to 375°F.
Prepare your instant mashed potatoes (per the package's instructions) and set aside to let slightly cool. OR you can use refrigerated mashed potatoes (just easier to spread if warm).
Over medium-high heat (we set the marker between 5 and 6), in the skillet, add the oil until hot and brown the ground turkey.
Add the mirepoix mix and sauté the vegetables in the remaining oil, along with the turkey, until just translucent.
Stir in the flour and seasoning mix, cook for about a minute, and stir to thicken.
Add all of your sauce reduction ingredients and continue stirring until mixture begins to boil. Reduce heat and simmer for about 5 minutes.
Spread the ground turkey and mirepoix mixture in an even layer on the bottom of a 9 x 13 baking dish. Top with the mashed potatoes and sprinkle with shredded cheese.
Place the dish in the oven and bake for 25 minutes, until the cheese is fully melted and the sides of the dish have become a bit of a golden brown crust. Serve and Enjoy!

We ended up just baking some Sister Schubert's Dinner Rolls alongside our shepherd's pie.You can even mash it up in a bowl and just enjoy!
